# Black Bean and Avocado Sushi Rolls

## Ingredients

-   2 cups cooked sushi rice
-   3 tbsp rice vinegar
-   4 nori sheets
-   1 small cucumber, julienned
-   1 avocado, sliced
-   1/2 cup julienned carrots

-   1 tbsp sesame oil
-   1 tbsp soy sauce
-   Pickled ginger, for serving
-   Soy sauce, for serving

## Instructions

1.  **Prepare Rice:** Mix cooked sushi rice with rice vinegar and let it cool to room temperature.

3.  **Assemble Sushi:** Place a nori sheet on a bamboo sushi mat. Spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange cucumber, avocado, and carrots in a line along the bottom edge of the rice.

5.  **Roll Sushi:** Use the bamboo mat to roll the sushi tightly from the bottom, applying gentle pressure to form a tight roll. Seal the edge with a bit of water.
6.  **Slice and Serve:** Slice the sushi roll into 8 pieces with a sharp knife. Repeat with remaining nori sheets and fillings. Serve with pickled ginger and soy sauce on the side.
