# Peanut Pad Thai Stuffed Sweet Potatoes

## Ingredients

-   4 medium sweet potatoes
-   1 cup cooked quinoa
-   1 cup shredded carrots
-   1/2 cup edamame beans
-   1/2 cup chopped bell peppers
-   1/2 cup chopped green onions

-   2 tbsp chopped peanuts (for garnish)
-   Fresh cilantro, for garnish

## Instructions

1.  **Cook Sweet Potatoes:** Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 40-45 minutes until tender.
