Badami mangoes, Karnataka’s answer to Alphonso, are mild and mellow, making them the perfect base for a sauce built on complexity. In this batch, the mango doesn't fight for attention. It sets the mood: warm, subtle, and slightly tangy. We paired it with bird’s eye chillies, the fiery heart of Thai cuisine.
But instead of going for a searing burn, we built layers—by introducing lemongrass, kaffir lime, coriander roots, and other fresh aromatics. The result is a sauce that’s light, vibrant, and alive with movement. You taste green. You taste heat. And then the mango quietly rounds it all out.
The texture is lush but pourable, with micro-chopped herbs creating a ripple of freshness in every spoonful. It’s the kind of hot sauce that plays well with food—it doesn’t overpower, it highlights.
