Alphonso season is fleeting, and so is this batch. This batch was designed around a single star—the Devgad Alphonso mango.
One of India’s most prized seasonal fruits, Alphonso brings a full-bodied sweetness, a floral richness, and a creamy pulp that borders on velvet. The mangoes we use arrive ripe from the Konkan coast, and they barely need anything—just enough to set the stage.
No spices. No herbs. Just red chillies—carefully selected for their heat and smokiness, then precisely balanced to enhance the mango’s natural depth without overshadowing it. It’s the kind of restraint that takes experience: using a single spice with just enough finesse to let the fruit shine.
This isn’t a sugar-forward mango sauce. It’s silky, tropical, and hot, with just enough acidity to keep it from feeling cloying. On the tongue, you first get that buttery Alphonso richness, then the chilli lifts it, brightens it, and lingers with a sweet burn.
Brush it on grilled prawns, spoon it over cream cheese, or pair it with anything that could use a little golden fire. This one is summer in a bottle.
