But she needed a bit of grit. So we threw her into the ring with our local country tomatoes- brazen, sharply acidic. When they hit the pan, itโs absolute poetry. Olive oil blooming with razor-thin garlic and hand-torn fresh garden basil, releasing that volatile perfume into the air. It will make you want to wipe the bowl clean with a heel of crusty bread.
