A mustard like no other.
We started with the punchy tang of raw Totapuri mangoes, harvested at peak season— when their acidity is bright, zesty, and unapologetically sharp. To match that intensity, our chefs went to mustard’s most revered regional expression— Traditional Kasundi, and gave it a SmallBatch twist.
This batch is stoneground by hand, the traditional way, using both yellow and black mustard seeds. The grind is slow, preserving the volatile oils and yielding a thick, buttery base with a crackling texture. Into this we fold in the Amba Halad— a rare, seasonal rhizome known as mango ginger, that our kitchen team often expressed desire to experiment with. More aromatic than spicy, it mirrors the top notes of green mango and softens mustard’s harsh edge. Then comes the final layer: yellow chillies, often found in the pickles of the north. It doesn’t scream, it simmers. Together, these ingredients form a relish that’s textured and vibrant—fruity, spicy, sharp, and earthy.
