We stone-grind black and yellow mustard seeds with amba haldi (mango ginger), local yellow chillies, and mustard oil. Then we let time do its work. The result is a sharp, earthy, unapologetically Indian mustard — punchy with heat, electric with aroma, and alive with real fermentation.
