Kung Pao Tofu and Pineapple Skewers

Ingredients

  • 400g firm tofu, cubed
  • 1 cup fresh pineapple chunks
  • 3 tbsp Vintage Kung Pao Sauce
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • Wooden skewers, soaked in water for 30 minutes
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh mint

Instructions

  1. Marinate Tofu: In a bowl, combine Vintage Kung Pao Sauce, soy sauce, maple syrup, and sesame oil. Add tofu cubes and let marinate for at least 30 minutes.
  2. Prepare Skewers: Thread tofu, pineapple chunks, red bell pepper, and green bell pepper onto soaked wooden skewers.
  3. Grill Skewers: Preheat the grill or grill pan to medium-high heat. Grill skewers, turning occasionally, until tofu is golden and vegetables are tender, about 10-12 minutes.
  4. Garnish: Sprinkle with chopped fresh basil and mint.
  5. Serve: Serve immediately.
