Vegan - Thai Chilli Basil Pasta

Ingredients

  • 200g penne or spaghetti (ensure it’s Jain)
  • 1 cup bell peppers (red and yellow), chopped
  • 1 cup baby spinach
  • 1/2 cup cooked green beans
  • 1/2 cup Root-Free | Umami Thai Chilli Basil Sauce
  • 2 tbsp olive oil
  • 1/4 cup chopped roasted peanuts (for garnish)
  • Salt to taste

Instructions

  1. Cook Pasta: Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare Vegetables: In a large skillet, heat olive oil over medium heat. Add bell peppers and cook until tender, about 5 minutes. Stir in green beans and baby spinach, cooking until spinach is wilted.
  3. Combine Pasta and Sauce: Add the cooked pasta to the skillet along with the Root-Free | Umami Thai Chilli Basil Sauce. Toss everything together until well coated and heated through.
  4. Garnish and Serve: Garnish with chopped roasted peanuts and serve hot.
