Ingredients

  • 2 cups cooked sushi rice
  • 3 tbsp rice vinegar
  • 4 nori sheets
  • 1 small cucumber, julienned
  • 1 avocado, sliced
  • 1/2 cup julienned carrots
  • 3 tbsp Slow Cooked Black Bean Sauce
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • Pickled ginger, for serving
  • Soy sauce, for serving

Instructions

  1. Prepare Rice: Mix cooked sushi rice with rice vinegar and let it cool to room temperature.
  2. Make Filling: In a small bowl, mix Slow Cooked Black Bean Sauce, sesame oil, and soy sauce.
  3. Assemble Sushi: Place a nori sheet on a bamboo sushi mat. Spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange cucumber, avocado, and carrots in a line along the bottom edge of the rice.
  4. Add Sauce: Drizzle a small amount of the Slow Cooked Black Bean Sauce mixture over the vegetables.
  5. Roll Sushi: Use the bamboo mat to roll the sushi tightly from the bottom, applying gentle pressure to form a tight roll. Seal the edge with a bit of water.
  6. Slice and Serve: Slice the sushi roll into 8 pieces with a sharp knife. Repeat with remaining nori sheets and fillings. Serve with pickled ginger and soy sauce on the side.
