Ingredients
- 4 large bell peppers (any colour)
- 1 cup cooked quinoa
- 1 cup black beans, rinsed and drained
- 3 tbsp Slow Cooked Black Bean Sauce
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional for a vegetarian version)
Instructions
- Prepare Peppers: Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Place peppers in a baking dish.
- Make Filling: In a large bowl, mix cooked quinoa, black beans, Slow Cooked Black Bean Sauce, corn, tomatoes, red onion, cilantro, cumin, smoked paprika, salt, and pepper.
- Stuff Peppers: Spoon the filling mixture into the bell peppers. If using, sprinkle shredded cheese on top.
- Bake: Cover the dish with foil and bake for 25-30 minutes, until peppers are tender. Remove the foil and bake for an additional 5 minutes to melt the cheese.
- Serve: Serve hot, garnished with additional cilantro if desired.
