Ingredients
- 4 medium sweet potatoes
- 1 cup cooked quinoa
- 1 cup shredded carrots
- 1/2 cup edamame beans
- 1/2 cup chopped bell peppers
- 1/2 cup chopped green onions
- 1/2 cup Roasted Peanut Pad Thai Sauce
- 2 tbsp chopped peanuts (for garnish)
- Fresh cilantro, for garnish
Instructions
- Cook Sweet Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 40-45 minutes until tender.
- Prepare Filling: In a bowl, mix cooked quinoa, shredded carrots, edamame beans, bell peppers, and green onions. Toss with Roasted Peanut Pad Thai Sauce.
- Stuff Sweet Potatoes: Once sweet potatoes are cooked, cut them open and fluff the inside with a fork. Spoon the quinoa mixture into each sweet potato.
- Garnish and Serve: Sprinkle with chopped peanuts and fresh cilantro before serving.
