Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked quinoa
  • 1 cup shredded carrots
  • 1/2 cup edamame beans
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped green onions
  • 1/2 cup Roasted Peanut Pad Thai Sauce
  • 2 tbsp chopped peanuts (for garnish)
  • Fresh cilantro, for garnish

Instructions

  1. Cook Sweet Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 40-45 minutes until tender.
  2. Prepare Filling: In a bowl, mix cooked quinoa, shredded carrots, edamame beans, bell peppers, and green onions. Toss with Roasted Peanut Pad Thai Sauce.
  3. Stuff Sweet Potatoes: Once sweet potatoes are cooked, cut them open and fluff the inside with a fork. Spoon the quinoa mixture into each sweet potato.
  4. Garnish and Serve: Sprinkle with chopped peanuts and fresh cilantro before serving.
